How to make Pickle Juice

Pickle Juice. Not the most attractive or intriguing name, so I bet many of you have never given much thought to the simple wonder of pickle juice. But with its importance of being able to preserve our favourite foods, and all of its health benefits why you wouldn’t? Did you know pickle juice actually makes a cracking post – workout cure, is a recommended PMS remedy, can soothe heartburn relief, and most important can be a natural hangover cure?! Now we’ve got your attention!
All you need to create your own and delicious pickle juice is
• 1 cup water
• 1/2 cup rice wine vinegar
• 1/3 cup plus 2 tablespoons sugar
• 2 tablespoons kosher salt
• 1 whole clove
• 1 teaspoon mustard seeds
• 1 teaspoon black peppercorns
• 1 teaspoon peeled and chopped fresh ginger
• 1/2 jalapeño, seeded and chopped

This is enough to make yourself 2 fine cups, just make sure you have some glass storage jars at hand! Pop your saucepan on a low heat and add in all of the ingredients together, then bring to a simmer. Once the sugar and salt has dissolved, allow your juice to cool before then using a fine sieve to retrieve any last bumps. Your very own pickle juice can be kept in the fridge for up to one month. You can use it for your cucumbers, eggs, or if you are feeling really brave, just drink it!
