How to store homemade bread – so bread stays fresh longer

Fresh from the bakery or from your own oven, bread is a real pleasure. To keep it that way for as long as possible, we will give you useful tips on how to store your bread.

In general, bread consisting of 100 percent wheat flour dries out best. The higher the proportion of rye in the dough, the longer the dough stays fresh. In contrast to wheat, rye can retain moisture for much longer. The same applies to wholemeal bread and sourdough bread. If you don’t want to freeze your fresh bread, simply make sure you keep it in the right place.

With optimal storage, wheat breads last up to 2 days, wholemeal and wholemeal breads even up to 9 days.

1. Leave bread in its original packaging only for a short period of time

Breads from the supermarket or bakery are usually packed in plastic bags or paper bags. They can also be stored there for a few days at room temperature. However, the air in such packaging cannot circulate so well that the bread begins to mould more quickly. A better alternative to storing bread are special bread boxes.

2. Bread stays fresh longest in the bread box

Unpacked bread that is not consumed immediately is best kept in clean, dry and ventilated containers at 12 to 18°C. These include ceramic bread pots, wooden or plastic bread bins and bread bags made of fabric or plastic.

The containers absorb excess moisture and return it back to the bread if necessary. They also guarantee good ventilation, which in turn prevents mould growth. If you additionally turn the bread with the cutting surface downwards, the baking product is doubly protected.

Tip: If possible, clean the bread box weekly with vinegar water. Bread crumbs and moisture promote the formation of mould.

3. Keep bread in the fridge only in exceptional cases

The refrigerator is unsuitable for storing bread. It only makes sense in summer when the temperature and humidity are high. In this way, you can prevent mould growth, especially in wheat bread. Due to the dry climate inside the refrigerator, however, the bread will also age faster.

4. Freeze bread for the supply

Bread tastes best fresh. You should therefore buy it more often, but in smaller quantities. It can be easily frozen for storage, either whole loaf or sliced. Defrosting is best done at room temperature.

5. Tips for stale bread

Old bread can also still be used. For example, use it as a soup topping for crispy croutons. You can easily bake white bread or rolls from the day before. Simply coat the crust with water and bake in a preheated oven for about 10 minutes.

6. What to do if the bread is infested with mould?

Bread with mould infestation is not suitable for consumption! Even if mould can only be seen in individual places, the whole bread can already be infested with toxins. Therefore, dispose of the bread box completely and clean it thoroughly.

In addition, the spores of bacteria that have survived the baking process and then germinate – this is referred to as “thread pulling” – can make bread inedible. Signs of infestation are bitter taste and fruit-like odor.
